Classic Spaghetti Sauce for Canning

This recipe is for a classic spaghetti sauce that's perfect for canning and enjoying all year long. It's simple to make and uses pantry staples, making it a great way to preserve the taste of summer.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can tomato paste
  • 1/2 cup water
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sugar (optional)

Instructions:

Prepare Your Jars:

  1. Wash and sterilize 8 pint jars (or 16 half-pint jars) and their lids.
  2. Place the sterilized jars on a clean, dry towel.

Make the Sauce:

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Stir in the crushed tomatoes, tomato sauce, tomato paste, water, oregano, basil, salt, pepper, and sugar (if using).
  5. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Taste the sauce and adjust seasonings as needed.

Canning the Sauce:

  1. Ladle the hot sauce into the sterilized jars, leaving 1/2 inch of headspace.
  2. Wipe the rims of the jars clean with a damp paper towel.
  3. Place the lids on the jars and tighten the bands until they are finger-tight.
  4. Process the jars in a boiling water bath for 30 minutes (for pint jars) or 25 minutes (for half-pint jars).
  5. Carefully remove the jars from the boiling water bath and place them on a clean, dry towel.
  6. Allow the jars to cool completely. You should hear a "pop" as the lids seal.

Storing:

  • Once cooled, store the jars in a cool, dark place for up to a year.
  • Once opened, store in the refrigerator for up to 5 days.
