Classic Spaghetti Sauce for Canning
This recipe is for a classic spaghetti sauce that's perfect for canning and enjoying all year long. It's simple to make and uses pantry staples, making it a great way to preserve the taste of summer.
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can tomato paste
- 1/2 cup water
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sugar (optional)
Instructions:
Prepare Your Jars:
- Wash and sterilize 8 pint jars (or 16 half-pint jars) and their lids.
- Place the sterilized jars on a clean, dry towel.
Make the Sauce:
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more.
- Stir in the crushed tomatoes, tomato sauce, tomato paste, water, oregano, basil, salt, pepper, and sugar (if using).
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Taste the sauce and adjust seasonings as needed.
Canning the Sauce:
- Ladle the hot sauce into the sterilized jars, leaving 1/2 inch of headspace.
- Wipe the rims of the jars clean with a damp paper towel.
- Place the lids on the jars and tighten the bands until they are finger-tight.
- Process the jars in a boiling water bath for 30 minutes (for pint jars) or 25 minutes (for half-pint jars).
- Carefully remove the jars from the boiling water bath and place them on a clean, dry towel.
- Allow the jars to cool completely. You should hear a "pop" as the lids seal.
Storing:
- Once cooled, store the jars in a cool, dark place for up to a year.
- Once opened, store in the refrigerator for up to 5 days.
