Peach Salsa: A Sweet and Spicy Summer Treat

Peach salsa is a delicious and refreshing twist on the traditional salsa, bringing a touch of sweetness to the usual spicy kick. This recipe is perfect for canning, allowing you to enjoy the vibrant flavors of summer long after the peaches are gone.

Ingredients:

  • 4 pounds ripe peaches, peeled, pitted, and chopped
  • 1 large red onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 jalapeño peppers, seeded and finely chopped (or more to taste)
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup lime juice
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions:

1. Prepare the salsa:

  • In a large bowl, combine the chopped peaches, onion, green bell pepper, red bell pepper, jalapeños, cilantro, lime juice, white vinegar, sugar, salt, cumin, and chili powder.
  • Stir well to ensure all ingredients are evenly distributed.

2. Canning:

  • Sterilize jars and lids: Wash jars and lids in hot, soapy water. Place jars in a boiling water bath for 10 minutes. Keep lids simmering in a separate pot of water.
  • Fill jars: Ladle the salsa mixture into sterilized jars, leaving 1/2 inch headspace.
  • Process: Wipe the rims of the jars with a clean cloth to ensure no debris remains. Place lids on jars and tighten rings. Process jars in a boiling water bath for 15 minutes, making sure the water covers the jars by at least 1 inch.
  • Cool and store: After processing, carefully remove jars from the boiling water bath and let them cool completely. You should hear a "pop" as the jars seal. If any jars haven't sealed, store them in the refrigerator and consume within 2 weeks.

Enjoy:

  • Store your canned peach salsa in a cool, dark place for up to a year.
  • Serve your peach salsa with tortilla chips, grilled meats, fish, or even as a topping for your favorite summer salads.

Tips:

  • For a sweeter salsa, add a bit more sugar to taste.
  • If you prefer a milder salsa, reduce the amount of jalapeño peppers or omit the seeds.
  • Experiment with different spices to create your own unique flavor combinations.

Enjoy the taste of summer with this delicious and easy-to-can peach salsa!
